Eddie V’s Prime Seafood Fort Worth Adds Executive Chef Bill Greenwood,
General Manager Richard Sabatowksi

    (Fort Worth, TX) -- Eddie V’s Restaurants, Inc. owners and longtime friends Guy Villavaso and Larry Foles have announced Bill Greenwood and Richard Sabatowski will lead their staff at Eddie V’s Prime Seafood Fort Worth as Executive Chef and General Manager, respectively.

    As the first two members of the Eddie V’s Prime Seafood Fort Worth team, they will begin work onsite in mid-December to prepare the staff for the restaurant’s anticipated opening in January 2009.

    “ Bill Greenwood knows more than just a thing or two about the restaurant industry,” Mr. Villavaso explained. “His experience began at the age of 10, and he has continued to build upon that foundation ever since. We are excited to have his culinary talents and passion as part of the Fort Worth Eddie V’s dining experience.”

    Mr. Greenwood was first introduced to Eddie V’s Executive Chef John Carver when the two worked at Pricci in Atlanta. From that position, Mr. Greenwood acquired vast culinary experience by working with James Beard award-winning Chef George Mahaffey at The Little Nell in Aspen, Colorado. He has also trained and learned from Chef Chris Keating at the Hotel Jerome in Aspen, the same hotel where he rose to prominence as the Chef De Cuisine. His most recent experience prior to joining Eddie V’s Prime Seafood was in San Jose, Calif. at the award-winning A.P. Stumps Chop House.

    “Richard Sabatowki also matured within the restaurant industry,” Mr. Foles added. “At the age of 14 Rich worked as a pizza box folder and from there, he never looked back. His diligence and energy earned him the impressive experience as General Manager for Il Fornaio in Denver before we offered him the General Manager position in Fort Worth.”

    Mr. Sabatowski’s reputation for excellent service and managerial leadership began when he officially launched his career as Assistant Manager with Chart House in Monterrey, Calif. He went on to spend 10 years at Il Fornaio, an upscale Italian restaurant, serving as the General Manager.
